Presto, here we have a creamy pesto-flavoured corn sauce, topped with roasted coloured capsicum. Sure to delight all those who taste it!

2 basic pizza base , 200 mm. (8") diameter
1 red capsicum
1 green capsicum
1 yellow capsicum
2 tbsp tomato ketchup
1 tbsp tomato chilli sauce
1 cup grated mozzrella cheese
butter or for greasing
salt to taste

To Be Mixed Into A Corn Pesto Mixture
1 cup cream style corn (canned)
3 tbsp pesto , refer handy tip
salt to taste
  1. Pierce a fork into each capsicum, grease them with oil and roast on an open flame till it is chared.
  2. Remove, cut into thin slices and wash thoroughly. Keep aside.
  3. Place one pizza base on a greased baking tray.
  4. Spread 1 tbsp tomato ketchup and ½ tbsp tomato chilli sauce on it.
  5. Spread half the corn pesto mixture and half the capsicum slices over it.
  6. Sprinkle a little salt and then spread half the cheese on top.
  7. Bake in a preheated oven at 200°c (400°f) for 10 minutes or till the base is evenly browned and the cheese melts.
  8. Repeat with the remaining ingredients to make another pizza.
  9. Serve hot.
