When cooked, you can also braise the dhokla with some oil, mustard seeds and curry leaves. garnish with coriander.

Corn Dhokra recipe - How to make Corn Dhokra

1 carton of sourmilk
1 cup of sweetcorn
1/4 cup gram flour
1/4 cup oil
3 chopped chillies
3 cloves of garlic (lehsun)
25mm of ginger
1 tbsp chilli powder
A pinch of tumeric powder
2 teaspoons of baking powder
salt to taste

  1. Mix the sourmilk with all the other ingredients together and stir well.
  2. Separate mixture into two equal portions and stir in 1 teaspoon of baking powder in each portion.
  3. Place the portions in a pan (20cm wide, 2-3 cm thick) in a double boiler and steam the two pans separately for 20mins each.
  4. When cool, cut in squares.
