Corn has always been my all-time favourite food. There are various types of corn available in the market today, ranging from white corn also known as Indian corn or Flint corn, to the immensely popular American corn, which is yellow in colour and softer than white corn. Though some recipes in the book ask for white corn or yellow corn in particular, you can usually substitute one for the other based on availability and convenience. Baby corn, which is fast gaining popularity in India and world over, is obtained by harvesting the corn plant early. They are usually eaten whole and maintain their texture and flavour when cooked.
And now that all these varieties of corn are available throughout the year, both fresh and canned, you can enjoy them in many different ways.
