Give life to your subzis with this simple but effective Indian spice-mix! The Coriander-Cumin Seeds Powder is an essential ingredient in every Indian kitchen.
It is used in most Indian subzis to impart a homely but appetizing aroma and flavour.
This masala uses just four ingredients and is easy to make. It is best made at home in small quantities, to get the maximum aroma and taste.
You can also arm yourself with other masalas like the Chaat Masala or Malvani Masala.
- Put the coriander seeds in a broad non-stick pan and dry roast on a medium flame for 1 to 2 minutes. Transfer them on a plate and keep aside to cool for 2 to 3 minutes.
- Put the cumin seeds in a broad non-stick pan and dry roast on a medium flame for 1 minute. Transfer them on a plate and keep aside to cool for 2 minutes.
- Combine the roasted coriander seeds, cumin seeds, cloves and bay leaves in a mixer and blend to a smooth and fine powder.
- Store refrigerated or at room temperature in an air-tight container and use as required.
