Coconut Rolls recipe - How to make Coconut Rolls

Ingredients

For The Pancakes
1 cup cornflour
1 cup plain flour (maida)
1 1/2 cups milk
a pinch of salt
melted butter for brushing and cooking

To Be Mixed Into A Filling
1 cup grated fresh coconut
1/4 cup powdered sugar
1 tbsp toasted sesame seeds (til)

Other Ingredients
oil for deep-frying

For Serving
vanilla ice-cream
Method
For the pancakes

  1. Combine all the ingredients along with 1 cup of water in a deep bowl and mix well.
  2. Heat a non-stick tava (griddle), grease it with butter, pour ¼ cup of the batter on it and spread in a circular motion to make a thick pancake of 100 mm. (4") diameter.
  3. Cook the pancake on a medium flame, using a little butter, till it turns golden brown in colour from both the sides.
  4. Repeat steps 2 and 3 to make about 11 more pancakes. Keep aside.

How to proceed

  1. Place a pancake on a clean, dry surface, put 1 tbsp of the filling on one end of the circle and roll it up tightly
  2. Seal the edges by applying a little of the pancake mixture.
  3. Repeat steps 1 and 2 to make 11 more rolls.
  4. Heat the oil in a deep non-stick kadhai and deep- fry, a few rolls at a time on a high flame, till they turn golden brown in colour from all the sides.
  5. Drain on an absorbent paper. Cut the rolls diagonally into 2 and serve immediately with vanilla ice-cream.

They are quick and easy.. This recipe is specially for all the coconut lovers.. Deep-fried coconut pancakes have a nice smack of coconut and roasted sesame seeds.

The aroma of this filling is divine and the taste lingers on for a few minutes after having a bite. Grated coconut, vanilla essence, sugar and til are a fabulous combo. My daughter would not stop eating this.
