Also known as- tembleque is a traditional favourite in latin america. It is a pleasing dessert of chilled coconut cream custard served with a combination of mango and strawberry sauces, and flavoured with dark rum. The cooking and preparation time are very less; but you need to allow a little setting time, so plan this recipe in advance.

For The Coconut Custard
3 cups coconut milk (nariyal ka doodh) , readily available
1/2 cup sugar
1/2 cup cornflour

For The Mango Sauce
2 medium sized mangoes , puréed and strained
2 tbsp dark rum (optional)

For The Strawberry Rum Sauce
1 1/2 cups strawberries , puréed and strained
1/2 cup sugar
2 tbsp dark rum (optional)
For the coconut custard

  1. Combine all the ingredients in a broad non-stick pan and cook on a medium flame for 5 to 7 minutes or till the mixture is thick, while stirring continuously with help of a whisk.
  2. Remove from the flame and pour equal quantities of the mixture into 6 individual bowls.
  3. Allow it to cool completely and then refrigerate for 4 hours or till the pudding sets. Keep aside.

For the mango sauce

  1. Combine the mango purée and rum in a bowl and mix well.
  2. Refrigerate till use.

For the strawberry rum sauce

  1. Combine the strawberry purée, sugar and rum in a bowl and mix well.
  2. Refrigerate till use.

How to serve

  1. Serve the coconut pudding chilled with mango sauce and strawberry rum sauce.

tembleque is a unique, sinful dessert! the coconut flavour gels well with the mango and the rum gives it more texture and weight! Loved it.
