Ingredients
3/4 cup coconut milk
1/2 cup chopped pineapple
1 tbsp ghee
salt to taste

To Be Ground Into A Smooth Paste
1/2 cup freshly grated coconut
1/2 tbsp roughly chopped garlic (lehsun)
1 tsp roughly chopped green chillies
3 whole dry kashmiri red chillies , broken into pieces
1/2 tsp roughly chopped ginger (adrak)
2 tsp poppy seeds (khus-khus)
2 tsp coriander (dhania) seeds
1 tsp cumin seeds (jeera)
1 1/2 tsp sugar
3 tbsp water
Method
    Method
  1. Heat the ghee in a deep non- stick pan, add the prepared paste and sauté on a medium flame for 2 minutes.
  2. Add the coconut milk, pineapple and salt, mix well and cook on a medium flame for 2 minutes, while stirring continuously.
  3. Serve hot.

I love this combination of pineapple and coconut and tasted very flavorsome with steamed rice... this can be a great curry to make when you are lazy to cut vegetable for curry some day... do try pineapple lovers...
