A lot of vegetables are used to prepare this flavourful stock. These vegetables have a wealth of nutrients that are released into the water and are retained by the stock.

The stock retained all the water-soluble vitamins like vitamins B and C that are many times lost during cooking. Use this stock in soups and gravies to enhance their flavours.

We have used this stock in diabetic friendly soup recipes like Asparagus Soup and Tum Yum Soup .

Clear Vegetable Stock, Diabetic Friendly recipe - How to make Clear Vegetable Stock, Diabetic Friendly

Preparation Time:    Cooking Time:    Total Time:     Makes 4 cups

1/2 cup onions , quartered
1 cup roughly chopped carrots
2 stalks celery (ajmoda) , roughly chopped
3 to 4 coriander (dhania) stems
1 tsp black peppercorns (kalimirch)
  1. Place all the ingredients in a large pan and add 6 cups of water.
  2. Bring to a boil and then lower the heat.
  3. Cover with a lid and simmer for 20 minutes till the vegetables have released their flavours.
  4. Cool, stain and keep aside.

Simple stock, not too many veggies, but tastes really nice... This stock further enhances the taste of any soup. Haven''t tried this stock to make any Chinese gravy, but will surely try it next time.

this stock is very useful in everyday cooking. Rich in vitamins and minerals!
