A lot of vegetables are used to prepare this flavourful stock. These vegetables have a wealth of nutrients that are released into the water and are retained by the stock.
The stock retained all the water-soluble vitamins like vitamins B and C that are many times lost during cooking. Use this stock in soups and gravies to enhance their flavours.
We have used this stock in diabetic friendly soup recipes like Asparagus Soup and Tum Yum Soup .
- Place all the ingredients in a large pan and add 6 cups of water.
- Bring to a boil and then lower the heat.
- Cover with a lid and simmer for 20 minutes till the vegetables have released their flavours.
- Cool, stain and keep aside.
