A comforting and nutritious soup, loaded with the goodness of veggies like red pumpkin, spring onions and spinach. Mushrooms add their magical texture to this soup, while ginger lends its zingy flavour.
This satiating yet light soup is made without any fatty or cholesterol laden ingredients, but abounds with nutrients like vitamins A and C, folic acid and protein. So, anytime you feel the need for some soulful nourishment, go for the Clear Soup with Mixed Vegetables.
- Boil 3½ cups of water in a deep non-stick pan, add ginger and garlic, mix well and cook on a medium flame for 2 minutes, while stirring occasionally.
- Add the red pumpkin, spring onions and carrot, mix well and cover with a lid and cook on a medium flame for 8 minutes, while stirring occasionally.
- Add the mushrooms, spinach, paneer and salt, mix well and cover with a lid and cook on a medium flame for 4 minutes, while stirring occasionally.
- Switch off the flame, add the lemon juice and pepper powder and mix well.
- Serve hot.
