Chilli button mushrooms recipe - How to make Chilli button mushrooms
Cooking Time: Total Time:    
250g button mushrooms, halved;
1tbsp cornflour; salt and pepper to taste; oil to fry
For the sauce
2tbsps oil;
2red chillies, broken into pieces;
1small piece ginger, finely chopped;
3 to 4 flakes garlic, finely chopped; 1medium onion, cubed;
1medium green capsicum, deseeded and cubed;
1red bell pepper,deseeded and cubed;
1stem leek, chopped diagonally; 1tsp light soya sauce;
1 tsp dark soya sauce;
1tsp red chilli paste;
1tsp white vinegar;
1tsp sugar;
1tsp chilli oil;
3tbsp vegetable stock;
1tbsp cornflour;
To serve with
5ml chill oil; few cabbage leaves, prepared noodles.
- Wash the mushrooms.combine cornflour; salt and pepper to taste.
- Roll the mushrooms in the cornflour, salt and pepper mixture and deep fry. drain and set aside.
- For the sauce-
- Heat the oil and toss the dry red chillies. add the chopped ginger and garlic and stir-fry for two minutes. add the cubes of onion, capsicum,red bell pepper and leeks and stir-fry further. add both the soya sauces, red chilli paste, vinegar, sugar, salt and pepper powder, chilli oil and stir-fry for a minute more. add stock to moisten the sauce and

- To make chilli oil, just heat oil, remove from heat and add chilli powder.
