A microwave variation of the ever so popular chilli paneer. Cottage cheese and baby corn tossed in an oriental soya based sauce makes a delicious starter. You may even serve this with fried rice as a main course or wrap it up in a thin chapati to make a yummy wrap.
- Put the baby corn in a microwave safe bowl. Sprinkle a little water and microwave on high for 1 minute. Keep aside.
- In another microwave safe bowl, combine the oil, spring onion whites, celery, green chillies, garlic, ginger and capsicum and microwave on high for 2 minutes stirring once in between.
- Add the paneer, baby corn and the soya sauce mixture. Mix well and microwave on high for 1½ minutes stirring once in between.
- Remove from the microwave, add the spring onion greens and mix well.
- Serve hot.
