Chilli Khajur Bhajiya recipe - How to make Chilli Khajur Bhajiya

For The Stuffing
5-6 dates (khajur)
1 cup powdered sev
1 tsp dried mango powder (amchur)
salt to taste
1 tsp red chilli powder
1/2 tsp turmeric powder (haldi)
1 tsp coriander-cumin seeds (dhania-jeera) powder

For The Batter
1 cup besan (bengal gram flour)
salt to taste
1/2 tsp carom seeds (ajwain)
1/2 tsp red chilli powder
1 tsp sugar

Other Ingredients
oil for deep frying
water as required
8-10 big green chilli

  1. Mix all the ingredients and add enough water to make medium thick batter and keep aside.

For the stuffing

  1. Microwave the dates with 1 tsp water for 1 minute.
  2. Take out and mash a little with hands.
  3. Add the remaining ingredients and mix well.

How to proceed

  1. Now take the chillies and slit in the centre and remove the seeds.
  2. Put the stuffing and press slightly so as to pack it and the stuffing does not come out while frying.
  3. Dip these stuffed chillies in the prepared batter and deep fry in hot oil till golden and serve with ketchup.
