Chatpati Baingan recipe - How to make Chatpati Baingan

500 gms brinjal (baingan / eggplant) (brinjal)
250 gms small red onions or thickly sliced red
10 to 12 slit green chillies
10 garlic (lehsun) cloves finely chopped
2 tbsp crushed dried red chillies flakes
4 tbsp of vinegar
3 tsp finely powdered black mustard seeds ( rai / sarson)
2 tsp of sugar
2 sprigs curry leaves (kadi patta)
2 cloves (laung / lavang) (crushed)
2 cardamoms (crushed)
salt to taste
oil for deep frying
  1. Heat oil in a pan.
  2. Cut eggplanst into thin slices and deep fry, drain and keep aside.
  3. In another pan add 4 tbsp oil.
  4. Fry onions for about 2 minuets and then fry green chillies for about 30 seconds drain and keep aside.
  5. Then saute crushed red chillies and curry leaves for about 15 seconds, keep all fried stuff aside.
  6. In the same pan , mix garlic , crushed mustard, cardamom, cloves and sugar together with vinegar heat till it comes to a boil. Remove from fire and put all fried stuff. Mix well.
  7. Add salt to taste. Mix well. Keep till cool.
  8. Serve with hot dal chawal as an accompaniment.
