Celery and Green Peas Soup

Celery has a very pleasing bitterness, if you have noticed. Combined with the nutty flavour of green peas and the pungent taste of onions, it results in a really exotic soup that you will enjoy thoroughly. The maida-milk mixture provides volume to the celery and green peas soup and also tones down the flavours to the perfect level.
- Heat the butter in a deep pan, add the celery and onions and sauté on a medium flame for 1 to 2 minutes.
- Add 2 ¼ cups of water, mix well and cook on a medium flame for 8 to 10 minutes.
- Cool and blend in a mixer to a smooth purée.
- Transfer the purée into a deep pan, add the maida-milk mixture, green peas, salt and pepper, mix well and cook on a medium flame for 3 to 4 minutes, while stirring occasionall
