1/2 kg cauliflower
1/4 kg tomatoes
2 tsp garam masala
1 tsp chilli powder
1/2 tsp turmeric powder (haldi)
1/2 tsp cumin seeds (jeera)
8 to 10 cashewnuts (kaju)
1 cup milk
1/2 cup coriander (dhania) leaves for garnishing
4 tbsp oil
salt to taste

  1. Soak cashew nuts in half cup milk for half an hour and the make a fine paste adding the rest half cup of milk.
  2. Puree tomato well by grinding it in a mixer and set aside.
  3. Cut cauliflower in 2 inch big florets. add little salt, turmeric and garam masala powder and set aside for 10 min.
  4. Heat a non-stick pan and add oil. add jeera and allow it to crackle. add the cauliflower florets and let it shallow fry in the oil until light brown. add the rest of the garam masala poeder red chilly powder and turmeric powder.
  5. Add tomato puree. bring the subzi to a boil. add cashew nut paste and let it boil for 1-2 min. add salt to taste.
  6. Switch off the gas and garnish with corriander leaves.
