250 gms carrots
4 to 5 green chillies
salt to taste
1 tbsp split mustard seeds (rai na kuria)
2 tbsp extra virgin olive oil
2 tbsp lemon juice

  1. Wash and scrape the carrots.
  2. Cut them in long thin about 1" size pieces.
  3. Same way wash and cut the green chillies as well.
  4. In a large bowl mix all the ingredients nicely.
  5. This pickle can be eaten on the same day but taste good after a day and can be kept for a week time in refrigerator.
