Instead of pineapple pieces we can use mixed fruits. dates can be replaced with walnuts

2 cups grated carrots
2 cups plain flour (maida)
1 to 1 3/4 cups sugar
2 eggs
1 tsp baking soda
a pinch of salt
1/2 tsp vanilla essence
1/2 cup pineapple pieces
3/4 to 1 cup light oil
1/2 cup dates (khajur) , almonds (badam) , raisins (kismis)

  1. Preheat the oven to 350 c for 10 min.
  2. Mix all the above ingredients well and put the mixture into a greased baking tray.
  3. Bake it for 25 min at 350 c.
  4. Take it out and bake it again for 15 min at 300 c.
  5. Cool it and cut into small pieces
