Yummy carrot kheer with goodness of carrots and milk. Relish it chilled garnished with nuts.
- Peel the carrots, cut into small pieces, boil and blend to a smooth paste. Keep aside.
- Simmer the milk in a deep pan till it reduces to 3/4th.
- Add the prepared carrot paste, sugar, cardamom powder and blanched almonds, mix well and simmer for more 15 minutes till the sugar is completely melted.
- Serve hot or chilled as per your choice.
