Caramel Kheer recipe - How to make Caramel Kheer

  1. Heat the ghee in a deep pan, add the bay leaf, cinnamon, cloves ,cardamom and saute for 10 seconds.
  2. Add the rice and saute for 3 minutes.
  3. Remove from the flame and transfer in a bowl and keep aside.
  4. In the same deep pan, add 2 tbsp sugar and cook on a slow flame till the sugar caramelizes.
  5. Add the milk, fried rice and spices and when the milk starts boiling, cover and cook on a slow flame for 20 minutes.
  6. Open and add the sugar and mix well.
  7. Cover and cook for 3 minutes.
  8. Meanwhile, heat 1 tbsp ghee in a small kadkai, add the nuts and saute for 2 minutes.
  9. Add these to the kheer and mix well.
  10. Serve hot or chilled.
