Capsica Rice is a quick and colourful rice delicacy and a treat for all capsicum lovers!!! Serve with any curry of your choice.

Capsica Rice recipe - How to make Capsica Rice

Preparation Time:    Cooking Time:    Total Time:     Makes 2 to 3 servings

1/2 tbsp oil
1 tbsp melted butter
1 large onion , cut in medium sized cubes
1 large tomato , cut in medium sized cubes
1 large capsicum , cut in medium sized cubes
1 large red capsicum , cut in medium sized cubes
1 large yellow capsicum , cut in medium sized cubes
4 cups cooked long grained rice (basmati)
1 tbsp chilli powder
salt to taste

For The Garnish
2 tbsp chopped coriander (dhania)
  1. Heat the oil and butter in a pan, add the onions and cook till the onions are transparent.
  2. Add the tomatoes and saute for 2 minutes on a medium flame.
  3. Add all the three types of capsicum and saute for a 2 minutes on a medium flame.
  4. Add the salt, boiled rice and chilli powder, mix well and cook for 5 minutes on a slow flame.
  5. Serve hot garnished with coriander.
