Capsica Rice is a quick and colourful rice delicacy and a treat for all capsicum lovers!!! Serve with any curry of your choice.
- Heat the oil and butter in a pan, add the onions and cook till the onions are transparent.
- Add the tomatoes and saute for 2 minutes on a medium flame.
- Add all the three types of capsicum and saute for a 2 minutes on a medium flame.
- Add the salt, boiled rice and chilli powder, mix well and cook for 5 minutes on a slow flame.
- Serve hot garnished with coriander.
