Broccoli and Basil Rice

With unmistakable shades of Italian cooking, the Broccoli and Basil Rice is a comforting rice preparation with crunchy veggies and creamy zucchini topped with herbs and chilli flakes, and garnished with grated cheese. Easy and quick to prepare, you can serve this dish without much ado as it demands no elaborate accompaniment. Just a choice of sauces and maybe a dash of pepper is all it calls for!
- Heat the butter in a broad non-stick pan, add the garlic and sauté on a medium flame for a few seconds.
- Add the baby corn, broccoli, zucchini and capsicum, mix well and cook on a medium flame for 2 minutes.
- Add the rice, chilli flakes, salt, milk and basil, mix well and cook on a medium flame for 2 minute, while stirring occasionally.
- Serve immediately garnished with cheese.
