The antioxidants contributed by broccoli and the other ingredients in this soup counteract the harmful cellular by products created during normal metabolism, making you fit and fresh.
- Heat the olive oil in a deep non-stick pan, add the onions, garlic, carrots and celery and sauté on amedium flame for 2 to 3 minutes.
- Add the broccoli, salt and 2½ cups of hot water, mix well and cook on a medium flame for 2 to 3 minutes, while stirring occasionally.
- Add the pepper and mix well.
- Serve hot.

Broth is a savory flavorful liquid made by simmering water with vegetables and spices. It can be eaten along with soup accompaniments like bread sticks, dough balls and croutons. Separate the stalks and florets from the broccoli head. In this recipe, we will be using the florets. You can discard the stalks or use them to make recipes like broccoli soup or broccoli and almond soup.
Chop the onions, garlic, carrots, celery and keep them ready. These vegetables are the main ingredient of the classic French mirepoix (a flavorsome base) which is used to make a wide variety of stocks, soups and sauces.
Heat the olive oil in a deep non-stick pan. You can also make use of butter or refined oil but, olive oil is a healthier option as compared to them.
Add the onions.
Add the garlic. If you are Jain, you can skip adding onions and garlic.
Add the carrots. Instead of thinly slicing, you can even quickly grate them using a grater.
Also, add the celery. If you have leeks then you can also toss in some to the broccoli broth.
Sauté everything on a medium flame for 2 to 3 minutes. When these subtle flavor boosters are sautéed on a medium flame, they release juices which enhances the overall flavor of the Broccoli Broth.
Add the broccoli and salt.
Also, add 2½ cups of hot water, mix well and cook on a medium flame for 2 to 3 minutes, while stirring occasionally.
Add the pepper and mix well. Freshly ground black pepper not only add heat but also, depth to the broccoli broth.
Serve the Broccoli Broth hot.
