- Preheat oven to 375 degrees f. and prepare a muffin pan by greasing lightly with oil.
- In a large bowl sift together all of the dry ingredients -- meaning flour, sugar, salt and baking powder.
- In another bowl wisk together the milk, oil and egg.
- Pour the wet ingredients into the dry ingredients and carefully blend without over-mixing.
- Add the blueberries and carefully fold them into the batter.
- Fill the muffin tins 3/4 of the way and bake for about 20 minutes or until golden
- Let cool 10 minutes before removing from the pan.
