Bhinda Ni Kadhi 1 recipe - How to make Bhinda Ni Kadhi 1

Preparation Time:    Cooking Time:    Total Time:     Makes 4 serving

8-10 medium ladies finger (bhindi) , cut into pieces
2 tbsp pure ghee
3 cups buttermilk
2 tbsp chana flour
salt to taste
1/2 tsp green chilli paste
1 tbsp jaggery (gur) , grated

For Tempering
1 1/2 tsp ghee
a pinch asafoetida (hing)
1/2 tsp cumin seeds (jeera)
1/2 tsp mustard seeds ( rai / sarson)
1-2 clove (laung / lavang)
1 inch stick cinnamon (dalchini)
7-8 curry leaves (kadi patta)

For Garnishing
few finely chopped coriander (dhania) leaves
  1. Add gram flour and buttermilk in a deep bowl whisk well so as to ensure that no lumps remain.
  2. Add salt and green chilli paste. Whisk well adding 1cup of water. Keep aside.
  3. Heat ghee in non stick pan, add the bhindi pieces and sauté till they are almost done. Keep aside.
  4. Heat ghee in another non stick pan.Add cumin seeds and mustard seeds, when the seeds crackles add asafoetida, , cloves, cinnamon and curry leaves.
  5. Add tempering to the buttermilk mixture and cook on low heat, stirring continuously for 5 minutes.
  6. Add jaggery and stir well. Add the sauteed bhindis and continue to boil for another 7-8 minutes.
  7. Serve hot Garnish with fresh coriander leaves with steamed rice or khichdi
