Baked vegetables in coconut sauce is an easy baked vegetable recipe which is low in calories, rich in fiber and nutrients and awesome in taste.The vegetables are stir fried and then tossed with creamy flavorsome coconut sauce and cheese before placing in the baked dish.

Ingredients

1 coconut, grated
1 chopped onion
3 cups boiled mixed vegetables
1 tbsp butter
2 tbsp coriander (dhania)
1 tbsp plain flour (maida)
6 bread slices
2 tbsp grated processed cheese
salt and pepper to taste
little milk to soak bread slices
for the sauce
1 cup tomato puree
1 onion, chopped
2 tbsp butter
1 tsp sugar
salt & chilli pwd to taste
Method

  1. Add 11/2 cup water to grated coconut & blend in mixie & strain.
  2. Heat butter.add onion,mixed veg,salt & pepper.
  3. Mix maida in coconut milk & add to veg.
  4. Make the sauce by adding all the ingredients & put it boil
  5. Take a baking dish & grease it.
  6. Dip bread slices in milk & arrange in the dish.
  7. Spread veg & then pour the sauce over it.
  8. Sprinkle cheese & bake at 250 degrees
  9. Serve hot.
