Baked Tofu Cheesecake recipe - How to make Baked Tofu Cheesecake

10 wheatmeal biscuits
3/4 cup margarine
1 tsp vanilla essence
1 tray (250 gms) tofu (bean curd/ soya paneer)
2 tbsp golden syrup or maple syrup
1/2 tbsp lemon juice
rind of half a lemon, grated
1 tbsp tahini dip
1 tsp vanilla essence
1/2 cup raisins or soaked sultanas (soak in orange or lemon juice)
cinnamon topping

  1. Crush the biscuits finely and mix with melted margarine.
  2. Press into cheesecake tin. in a blender, combine the tofu, golden (or maple) syrup, lemon juice and rind, tahini and vanilla.
  3. Blend.
  4. Add raisins to the filling and spoon over the base.
  5. Sprinkle with cinnamon.
  6. Bake in a moderate oven for 25-30 minutes.
  7. Cool in oven.
