This baked dish is to stuff the potato jackets with some corn filling and some spicy masalas and topped with cheese to make it enjoyable on a rainy day

Baked Stuffed Potato Jackets recipe - How to make Baked Stuffed Potato Jackets


Preparation Time:    Cooking Time:    Total Time:     Makes 4 serving

4 no.s parboiled medium sized potatoes with jackets cut to halves
2 tbsp olive oil
1 tsp finely chopped garlic (lehsun)
2 tbsp finely chopped capsicum
2 tbsp finely chopped onions
1 tsp dry red chilli flakes (paprika)
salt to taste
1 tsp dried oregano
1 tsp mixed herbs
1 tsp pepper powder
1 cup boiled sweet corn kernels (makai ka dana)
1 cup grated processed cheese
coriander (dhania) for garnishing
  1. Boil the potatoes in vesselful of water.
  2. Add salt to the water so that potatoes are not raw in taste.
  3. Heat olive oil,put garlic in a kadhai and saute for few seconds.
  4. Then add onion and capsicum and fry till onion turns pink.
  5. Then add paprika,salt,pepper powder,oregano,mixed herbs,boiled corn and mix well and keep aside.
  6. Take the potato halves and scoop out in the middle.
  7. Put the prepared stuffing in the scooped potatoes.
  8. Top with grated cheese and coriander and bake in a preheated oven at 200 c for 5-6 minutes or till the cheese melts.
  9. Serve hot.
