These nutritious baked samosas are made with a stuffing of mixed sprouts, perked up with such a beautifully balanced mix of spices that you will not miss the potatoes! We suggest letting the Baked Samosa with Mixed Sprouts to cool for 10 minutes before serving.

Ingredients

For The Dough
5 tbsp whole wheat flour (gehun ka atta)
1/2 tsp oil
salt to taste

For The Filling
1 cup boiled mixed sprouts (moong , matki , chana etc.)
1/4 cup coarsely crushed oats
1/4 tsp asafoetida (hing)
1 1/4 tsp chilli powder
1/4 tsp turmeric powder (haldi)
1/2 tsp coriander (dhania) powder
1/2 tsp cumin seeds (jeera) powder
1/2 tsp dried mango powder (amchur)
1/2 tsp chaat masala
2 tbsp finely chopped coriander (dhania)
salt to taste

Other Ingredients
1 tsp oil for brushing

For the dough

    For the dough
  1. Combine all the ingredients in a deep bowl and knead into a stiff dough using enough water. Keep aside.

  1. Put the mixed sprouts in a deep bowl and mash it lightly when hot with the back of a spoon.
  2. Add all the remaining ingredients and mix very well using your hands. Keep aside.

  1. Divide the dough into 8 equal portions.
  2. Roll out a portion of the dough into 150 mm. (6”) diameter thin oval shape.
  3. Cut the oval horizontally into 2 equal portions using a knife.
  4. Take a portion and join the edges to make a cone and seal it with little water.
  5. Stuff the cone with approx. 1 tbsp of the filling and apply little water on the edges to seal it.
  6. Repeat with the remaining dough and filling to make 15 more samosas.
  7. Place them on a greased baking tray and brush all the samosas using the oil.
  8. Bake in a pre-heated oven at 180°c (360°f) for 15 minutes, turn them over and bake them again for 15 minutes.
  9. Cool slightly for 10 minutes and serve immediately with green chutney.

Samosa using sprouts sounds interesting.. To add to it, no maida is used to make the outer covering... It''s been replaced with whole wheat flour. Half an hour of baking is all it needs to make this non-fried snack. Loved it! Worth trying again and again...
