Ingredients
2 tsp butter
1/2 tsp finely chopped garlic (lehsun)
2 tsp olive oil
4 tsp finely chopped onions
4 tsp finely chopped capsicum
2 no.s finely chopped green chillies
15 no.s large mushrooms (khumbh)
salt to taste
1 tsp red chilly powder
1/2 tsp black peppercorns (kalimirch) powder
2 tbsp soy sauce
2 tsp chopped coriander (dhania)
2 tbsp baked beans
pinch turmeric
1 cup grated processed cheese
Method
  1. Wash mushrooms and cut the cap and seperate the stems and keep aside.
  2. Cut these stems very finely and keep aside.
  3. Parboil the mushroom caps by adding little salt and pinch turmeric to the water and keep aside.

For the filling

  1. Heat butter and olive oil in a pan and put garlic and onion saute for a few seconds till onions turn pink.
  2. Now add capsicum and continue frying,
  3. then put green chillies,chopped mushroom stems, salt,black pepper powder,red chilly powder,soya sauce,
  4. coriander and baked beans and fry for 2-3 minutes and keep
  5. aside.

How to proceed

  1. Take the parboiled mushroom caps and stuff with the prepared stuffing and arrange on a greased baking tray.
  2. Sprinkle 1 tsp of grated cheese on each mushroom.
  3. Bake in a preheated oven at 180 c for 5-7 minutes or till the cheese melts and serve hot.
