A novel soup recipe, baked bean and pasta soup is a vegetable soup with a difference. The baked beans and boiled pasta combination is unusual but in the soup tastes great. A perfect winter soup recipe which is packed with proteins and nutrients. .

Baked Bean and Pasta Soup recipe - How to make Baked Bean and Pasta Soup

Ingredients
4 cups vegetable stock
1 tbsp olive oil
1 medium onion , chopped
2 cloves of garlic (lehsun) , crushed
1 small tin of baked beans
2 tomatoes , blanched and pureed
1/2 cup pasta
few basil leaves , chopped
2 cups washed and roughly chopped spinach (palak)
Method
    Method
  1. Heat the olive oil in a deep pan, add onion and saute for 5 mins.
  2. Add the garlic and saute for more 3 minutes.
  3. Add the vegetable stock, baked beans and tomatoes and bring almost to a boil.
  4. Add the pasta and simmer for 10 mins or till the paste gets cooked.
  5. Just before serving, add the basil and spinach and cook just till the spinach is bright green and wilted.
  6. Serve hot.
