Learn how to prepare the aval payasam with milk and poha or rice flakes. The rice flakes are cooked with milk and sugar and then chilled with grated nuts as topping. A perfect festival dessert item.

Aval Payasam recipe - How to make Aval Payasam

Preparation Time:    Cooking Time:    Total Time:     Makes 4 servings

4 tbsp beaten rice (poha)
4 tbsp ghee
1 cup sugar
3 cups milk
1 cup condensed milk
a pinch of saffron (kesar) strands soaked in milk
1/4 tsp cardamom (elaichi) powder

For The Garnish
5 to 10 chopped cashewnuts (kaju)
5 to 10 raisins (kismis)
  1. Heat the ghee in a pressure cooker, add the poha and saute till they turn pink in colour.
  2. Add sufficient milk to it, mix well and pressure cook for 5 minutes.
  3. Meanwhile, add the sugar in remaining milk and boil till the sugar dissolves completely.
  4. Add all the ingredients except condensed milk slowly and mix well.
  5. When the mixture becomes thick, cool slightly and add condensed milk and mix well.
  6. Serve warm garnished with cashewnuts andand raisins.
