For The Batter
1 cup soaked urad dal (spit black gram)
1/2 tbsp ginger (adrak) paste
1/2 tbsp garlic (lehsun) paste
3 pinches asafoetida (hing)
1/2 tbsp chopped green chillies
salt to taste

For The Stuffing
150 gms paneer (cottage cheese)
1/2 tbsp garam masala
1/2 tbsp dried mango powder (amchur)
salt to taste

Other Ingreidnets
10 pieces colocassia
oil for frying
  1. Drain the urad dal completely and puree in a mixer using 1/4 cup of water to make a fine paste .
  2. Now add garlic and ginger paste in it along with the chopped green chillies.
  3. Add the asafoetida and whisk well to make a smooth batter.

How to proceed

  1. Pressure cook 10 pieces of arbi in a cooker for one wistle. Peel them off.
  2. Scoop out the inner portions of the arbies with the help of a knife or a peeler so that they can be stuffed with the stuffing.
  3. The scooped out material of the arbies is kept aside.
  4. Stuff the scooped arbies with the paneer stuffing.
  5. Slightly press them between the palms to make them flat. Dip them in the batter and deep fry in the oil.
  6. Serve hot with pudina ki chatni.
