Apple karanji is a sweet dish recipe with grated apples cooked in ghee and sugar and then served topped with chopped nuts. A fruit based mithai recipe, apple karanji is an excellent choice for parties and festivals.

3 medium sized apples, peeled and chopped
1 cup sugar (depends upon apple sweetness)
1 tsp cinnamon (dalchini) powder
1/2 tsp cardamom (elaichi) powder
3 saffron (kesar) strands (dissolve in ½tsp milk)

for dough:
1 cup plain flour (maida)
1 tbsp ghee
a pinch of salt
small sized karanji mould
ghee for deep frying

  1. First make a smooth dough with (above)given ingredients.cover with a muslin cloth.keep aside.
  2. Prepare apple cream or stuffing now..
  3. Wash&peel apples.
  4. Remove seeds&hard part inside.
  5. Crush them&mix sugar,cook for 3 to 4 min. till the cream gets thick.
  6. Add cinnamon,cardamompowders
  7. Stir well.
  8. After getting like paste,remove from the heat,allow to cool.
  9. Now make equal size balls (without cracks)with well kneaded dough.
  10. After cooling take the apple cream&add 1tsp corn flour to get stiff cream.
  11. Make 8karanjis (using mould)
  12. And deep fry them in the ghee to golden brown colour.
