Aloo, Mango, Carrot Podimas recipe - How to make Aloo, Mango, Carrot Podimas

1 boiled and chopped potato
1/4 cup finely chopped onions
1/2 cup grated carrot
1/4 cup grated raw mango
1 tsp mustard seeds ( rai / sarson)
1 tsp urad dal (split black lentils)
4 curry leaves (kadi patta)
salt to taste
a pinch of turmeric powder (haldi)
oil for cooking
  1. Heat the oil in kadai and add the mustard seeds and urad dhal.
  2. When the seeds crackle, add the onions and saute till golden brown.
  3. Add the carrots and mangoes and saute for 2 minutes.
  4. Add the remaining ingredients, mix well and cook til the carrots and mango are cooked.
  5. Serve hot.
