rice khichu is a simple quick snack to make made of mainly rice flour which is cooked with spices.

Gujarat is known for its many snacks that are a treat to the palate even while being friendly to the stomach! Here is another such easy to make rice khichu and easily digestible afternoon snack. It’s so popular that its a common Gujarati street food.

Rice khichu is so named because it has to be served really hot, when it is soft and aromatic. Serving it in the traditional way with oodles of raw oil is how gujarati rice khichu is served. Alternatively, we suggest you shape rice flour khichu with an interesting mould, and top it with just a little bit oil before serving.

When make the recipe, soda bi carb and salt is added. So be cautious while adding salt as soda will make the khichu a bit salty.

At home, we make this chawal ka atta khichu for dinner or at times for quick evening snack . Always pour some oil on top of thekhichu and then top it with koro sambhar.

Ingredients

For Rice Khichu
1 cup rice flour (chawal ka atta)
1/2 tsp cumin seeds (jeera) , roughly ground
1 tsp finely chopped green chillies
a pinch of baking soda
salt to taste
2 tsp oil

For The Topping
8 tsp oil
chilli powder for sprinkling
Method

  1. To make rice khichu, combine 4 cups of water, cumin seeds, green chillies, soda bi-carb and salt in a deep non-stick pan, mix well and boil on a high flame for 3 to 4 minutes.
  2. Add the oil and rice flour and mix well, while stirring continuously with a wooden spoon or a whisk so that no lumps remain.
  3. Cook on a slow flame for another 3 to 4 minutes or till the mixture leaves the sides of the pan, stirring once in between. Keep aside.
  4. Divide the rice khichu into 4 equal portions. Pour 2 tsp of oil over each portion along with a sprinkle of chilli powder.
  5. Serve the rice khichu immediately.

For making the rice khichu

  1. For making the rice khichu, in a deep non-stick pan, take cumin seeds. Also, you can toss some sesame seeds for an added flavour.
  2. Add green chillies. You can add more or less chillies as per the spice level you can handle. Alternatively, you can add green chilli paste or even put some ginger to make the khichu recipe more delightful.
  3. Add soda bi-carb and salt. My grandmother makes use of papad khar while preparing the khichu. Also, be cautious while adding salt as soda will also make khichu a bit salty.
  4. Pour 4 cups of water and mix well. You can even put some fresh coriander leaves to elevate the flavour of rice khichu.
  5. Boil on a high flame for 3 to 4 minutes.
  6. Once the water starts boiling, add the oil.
  7. Add the rice flour and mix vigorously using a whisk or a flat ladle. You can even make use of a wooden rolling pin to mix the khichu mixture. While you are stirring, within a minute, the rice flour will absorb most of the water and becomes a thick, sticky dough. Khichu can be prepared with other flour like bajra flour, jowar flour, nachni flour or whole wheat flour. For variation, you can even use a combination of flour.
  8. Cook on a low flame for another 3 to 4 minutes or till the mixture leaves the sides of the pan, while stirring it continuously to ensure that it is not sticking to the bottom of the pan. Switch off the flame and it is ready to serve!
  9. Divide the gujarati rice khichu into 4 equal portions. Put a portion of the khichu in an individual cup.
  10. Pour  2 tsp of oil evenly over it.
  11. Finaly sprinkle little chilli powder or koro sambhar. Here is the perfect recipe to make koro sambar it at home.
  12. Serve the rice khichu immediately.
