Any starter – especially of indian origin – is incomplete without the famous sweet and sour chutney. I have used it in recipes like bhel, page x. Iron-rich jaggery and dates lend their sweet taste to blend with the tangy flavour of tamarind. You can prepare it in bulk, freeze it and use it as and when required.

Makes 3 cups

Ingredients

1 cup deseeded dates (khajur)
2 tbsp deseeded tamarind (imli)
1/2 cup grated jaggery (gur)
1/2 tsp chilli powder
1 tsp cumin seeds (jeera) powder
salt to taste

Method
  1. Wash the dates and tamarind and put them in a pressure cooker.
  2. Add the jaggery and 1 cup of water and pressure cook for 2 whistles.
  3. Allow the steam to escape before opening the lid.
  4. Blend in a mixer to a smooth paste and strain the mixture through a sieve.
  5. Add 1½ cups of water, chilli powder, cumin seeds powder and salt and mix well. Use as required. Store refrigerated.
