While we commonly make quick and easy versions of hummus with chickpeas, garlic and curds, this is a slightly more elaborate hummus with tahini paste.

This authentic hummus with tahini paste recipe has a rich mouth-feel and really strong flavour. Apart from the exciting flavour of tahini paste, the strong taste of garlic and a tinge of lemony tang are also clearly noticeable in this recipe, not to forget the herby touch of parsley.

Hummus is super easy to make all you need to do is soak kabuli chana a day prior! Once, the kabuli chana are soaked, pressure cook them. Drain and transfer to a mixing jar. Further, add tahini paste. Tahini paste is a thick, creamy paste made by roasting sesame seeds and grinding them up with olive oil to get a paste. This paste is an essential ingredient in making the traditional Lebanese hummus.

Next, add garlic. Lemon juice and cumin powder. With it add olive oil. This is the second most important ingredient for hummus. Use extra virgin olive oil if possible, but if you don’t have that, then regular is fine. At this stage you can also add a little curd to make the hummus light and fluffy. Blend to a smooth mixture. Add a little reserved chickpea cooking water, only if required. Add this water, little by little, as you do not want your hummus to be runny. I have used approximately 2-3 tbsps of water. Further, take it out in a serving bowl. Drizzle olive oil over Lebanese hummus, sprinkle cumin seed powder and garnish with parsley.

You can serve the hummus with tahini paste along with Lavash or Chips, to make a wonderful finger food. You can munch on it while watching a movie, but it is so tasty that it can be served at parties too!

1 1/2 cups soaked and boiled kabuli chana (white chick peas)
2 tbsp tahini paste
1 1/2 tsp roughly chopped garlic (lehsun)
2 tsp lemon juice
1/4 tsp cumin seeds (jeera) powder
2 tbsp olive oil
salt to taste

For The Garnish
1 tbsp olive oil

a sprig of parsley

  1. To make hummus with tahini paste, combine all the ingredients in a mixer and blend it till smooth.
  2. Transfer the mixture on a serving dish, garnish it with olive oil, cumin seeds powder and parsley.
  3. Serve the hummus with tahini paste immediately with lavash and chips or refrigerate till use.

Method to make Hummus with Tahini paste

  1. To make hummus with tahini paste recipe | authentic hummus | Lebanese hummus | wash and soak approximately 3/4 cup of kabuli chana (chickpeas) in a deep bowl with in enough water.
  2. Cover with a lid and let it soak overnight. The chickpeas will double in size. Soaking is a very important step for cooking of any beans or legumes. By soaking them, the beans become softer and hence take less time to cook. If you do not have 8 -10 hours for soaking, boil the chickpeas for 5 minutes, cover with a lid and let them soak for 2 - 3 hours. This is called the quick soak method which is almost as effective as soaking for 10 hours.

  3. They will look like this once soaked for 8 to 10 hours. Drain and rinse the chickpeas.
  4. Put the soaked chickpeas in the pressure cooker. Alternately, you can even boil them but that can take upto 45 minutes till an hour.

  5. Add enough water and salt and pressure cook for 4 whistles. Here, overcooked chickpeas work great too. If you want the chickpeas to go soft, you can add a pinch of cooking soda while pressure cooking so that the chickpeas cook properly.
  6. Wait for the pressure to drop naturally before opening it. If you open it in a haste, the chickpeas will not have cooked properly. 3/4 cup of raw chickpeas will yield about 1 1/2 cup of boiled chickpeas. If you open the cooker before the pressure has dropped, the chickpeas might not have cooked through.

  7. Drain the kabuli chana. Tip: Keep aside some cooking water of the chickpeas to add to the blender if required. This liquid will give a smooth consistency to the hummus. If you have already drained the liquid, you can use water instead.
  8. Let the chickpeas cool completely and then put them in a mixer.
  9. Now add 2 tablesponns tahini paste. See at the bottom of the recipe on how to make tahini paste. Tahini paste is a thick, creamy paste made by roasting sesame seeds and grinding them up with olive oil to get a paste. This paste is an essential ingredient in making the traditional Lebanese hummus. You can use store bought hummus or you can make tahini paste at home.
  10. Now add the garlic. If you want to make it jain, you can avoid the garlic.

  11. Now add the lemon juice. This will give a tangy taste.
  12. Now add the cumin seeds powder. This is made by roasting the cumin seeds and then grinding them into a fine a powder.

  13. With it add olive oil. This is the second most important ingredient for hummus. Use extra virgin olive oil if possible, but if you don’t have that, then regular is fine. At this stage you can also add a little curd to make the hummus light and fluffy.
  14. Add salt, mix it all together and blend to a smooth mixture. Add a little reserved chickpea cooking water, only if required. Add this water, little by little, as you do not want your hummus to be runny. I have used approximately 2-3 tbsps of water.

  15. Spoon the mixture into a serving bowl. This is the basic hummus recipe, but you can even make different types of hummus like Spicy Garlic Hummus or Spinach Hummus.

  16. Drizzle some olive oil on it. Since we are using extra virgin olive oil here, the taste of the oil will come through and taste fantastic with the hummus.
  17. Now sprinkle a little cumin seeds powder over this.
  18. Finally, garnish hummus with tahini paste | authentic hummus | Lebanese hummus | with a little parsley.
  19. Refrigerate hummus with tahini paste | authentic hummus | Lebanese hummus | till use and serve with lavash or breadsticks.

Method for Tahini Paste

  1. To begin making the tahini paste, clean the sesame seeds and remove any stone or debris.
  2. For making the Lebanese tahini paste at home, firstly take a small broad non-stick pan & add the sesame seeds.
  3. Dry roast on a slow flame for 1 to 2 minutes or till fragrant. Alternatively, you can place the sesame seeds on a baking sheet and toast it in the preheated oven for about 8 to 10 minutes. Toasting the sesame seeds gives the tahini a nuttier flavor.
  4. Don’t forget to stir the seeds frequently so they get evenly toasted. Do not allow the sesame seeds to turn brown. They should be light golden in colour after roasting. 
  5. Remove from the flame, transfer to a plate and keep aside to cool completely.
  6. Transfer the sesame seeds to a mixer jar. 
  7. Blend till it is almost smooth. 
  8. Add the olive oil. 
  9. Add little salt. 
  10. Blend it in a mixer till you get a smooth Tahini paste.
  11. Use the tahini paste as required or store it in an air-tight container.

Actually i just wanted to know what type of olive oil is used for hummus, pasta n all as there r varieties of olive oil available in the market..so pls help me which is the best olive oil to use n which brand..i was using bertolli classico olive oil till now..can i continue with it ? Is it right oil ?

Tarla Dalal    Hi Tanvi, In the case of Pasta, you can use any kind of pure olive oil for cooking whereas you can finish drizzling it with extra virgin olive oil.For hummus, we suggest you use extra virgin olive oil because it is not cooked and retains all the flavours.

For garnishing, can we use coriander leaver or basil or mint other than parsley?

It turnd out to b amazin n v quick. Rest f d hummus recipes r missin d sesame seeds which I feel is a must so dis recipe is perfectly fine n also a gud combination with soup sticks in case pita bread nt available. Must try
