Semolina has no aroma but a lovely, smooth flavour. Due to its bland taste, it is suited equally to both sweet and savoury dishes. Semolina made from Durum wheat grain is used to make all pasta doughs. One of the best South Indian snacks is Upma made of semolina and spices. Semolina can be made into a sweet with sugar, raisins and ghee called Sooji ka Halwa. It is also made into a batter and fried on a griddle to make pancakes. Several crisp sweets are made of semolina blended with flour, sugar and spices and then fried or baked.
