Description:
The young leaves and sprouts of fenugreek are eaten as greens and the fresh or dried leaves are used to flavour other dishes.
How to select:
The dried leaves have a bitter taste and a strong characteristic smell which means they need to be used sparingly. Dried fenugreek leaves, called Kasuri Methi is sold in packets either whole or powdered.
Use:
Kasuri Methi is used as a flavouring and adds a very wholesome touch to vegetables and onion based curries.
How to store:
store in an airtight container in a cool dry place.
