Description:
A banana tree is not really a fruit tree, but an herb, with a "tree trunk" that is a stem of tightly wrapped leaves. The banana we eat is the fruit (technically a false berry) and the black piece that sometimes remains on the end of the banana is the dead flower. The fruit of the banana tree, a long leaves plant originating in India and cultivated in tropical regions. Each plant bears clusters of 50 to 200 fruits with sweet, white and fleshy pulp.
How to select:
Look for plump, even-coloured bananas without green tips (which will require further ripening). To ripen at home, place in a brown paper bag. Use bananas with lots of brown speckles for breads, because these are fully ripe and all starch has been converted to sugar.
Use:
Bananas are very sweet and can be mashed and added to baked goods as a natural sweetener. Frozen bananas can be puréed to make smoothies or a healthful substitute for ice cream. They can be eaten out of hand or sliced and added to fruit salads. For an impressive dessert, flambé sliced bananas and serve over ice cream, or make a nutritious sandwich by combining sliced bananas and peanut butter on whole-grain bread.
How to store:
Store uncovered at room temperature, or in the refrigerator for several days (the peel will turn brown but the fruit will be fine).

Fruit bananas are of different kinds :
Green or Yellow / Common Speckled Banana
These are the commonly available fruit bananas and are used in several sweet dishes. They are harvested green and their skin turns yellow with brown stains once ripe.
Elaichi Bananas
They are small yellow bananas usually 4" to 5" long. They are highly scented and sweeter than green or common speckled banana.
Red or Pink Bananas
These are the largest varieties of fruit bananas. The pulp has a sweet floury taste. When raw, they can also be used as a vegetable.
Banana Leaves / Kele ka Patta
Banana leaves are used to steam or wrap food like rice, pancakes etc.
Banana leaves are also used for decoration during festivals. Meals are often served on banana leaves during wedding receptions or other festivals especially in the coastal and Southern regions of India.
