Pineapple puree is easy and quick to make and has varied uses in cooking. To make pineapple puree, peel, core and chop fresh pineapple into medium chunks. Toss with sugar and cook until fruit is soft and sugar is just starting to caramelize. Puree in a food processor until smooth. Chill and preserve it in a sterilized bottle for further use.
