However if you keep serving the traditional mash with a simple sprinkling of salt and pepper everyday they will get bored of it. Often, you need to think of innovative ways to serve even common veggies to kids. Here is one such exciting way to serve boiled potatoes! Hollow centres of boiled potatoes are filled with a tangy baked beans mixture and topped with gooey cream cheese. Once kids take a bite of the Beans and Cream Cheese Potatoes, they cannot resist finishing it off!

Ingredients

For The Potatoes
4 boiled potatoes (unpeeled)

For The Bean Topping
3/4 cup baked beans
1 tbsp butter
1/4 cup finely chopped onions
1/2 tsp chilli powder
2 tbsp tomato ketchup
salt to taste

To Be Mixed Together For Cream Cheese
1/2 cup thick beaten curds (dahi)
1 tbsp fresh cream
1/4 cup grated processed cheese
salt to taste

For The Garnish
a sprig of coriander (dhania)
Method

For the potatoes

  1. Cut each potato horizontally into two.
  2. Scoop the potato halves a little so that a slight depression is formed for the filling. Keep aside.

For the bean topping

  1. Heat the butter in a broad non-stick pan, add the onions and sauté on a medium flame for 1 minute.
  2. Add the baked beans, chilli powder, tomato ketchup and salt, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
  3. Divide the topping into 8 equal portions and keep aside.

How to proceed

  1. Fill each potato halve with a portion of the bean topping and a dollop of cream cheese over it.
  2. Serve immediately garnished with a sprig of coriander.

  1. Boil the potatoes in salted water so they do not taste bland.
  2. If your child doesn’t like the potato skin you can always peel the potatoes and follow the recipe.

Very yummy, the dollop of cream cheese on top adds to the overall taste. Protein rich rajma balances the carbohydrates of the potatoes.

hugely elaborate recipe but kids really love it! its very tasty and the ingredients make sure, health and nutrition is taken care of.
