Mix it by rubbing between your fingertips till everything is incorporated well and resembles a crumble like texture. Knead into a stiff dough using enough water. Divide and roll into small circles. Prick them with a fork and place on a greased baking tray. Pricking ensures that the puri won’t puff up and you will get crispy puri after baking.

Bake it in a pre-heated oven at 180°C (360°F) for 18 to 20 minutes. Flip healthy baked puri after 10 minutes. You may take a longer time depending on the thickness of the healthy baked papdis so keep an eye after as the edges tend to burn easily. Cool the baked puris and store in an air-tight container.

Ingredients

1 cup whole wheat flour (gehun ka atta)
1/2 tsp turmeric powder (haldi)
1 tsp chilli powder
1 tsp coriander-cumin seeds (dhania-jeera) powder
2 tsp oil
salt to taste
1/2 tsp oil for greasing

  1. To make baked whole wheat puri, combine all the ingredients in a bowl and knead into a stiff dough using enough water. Keep aside for 10 to 15 minutes.
  2. Divide the dough into 20 equal portions and roll out each portion into a circle of about 75 mm. (3") diameter.
  3. Grease a baking tray using oil, place 10 puris at a time on it and prick all over using a fork.
  4. Bake it in a pre-heated oven at 180°c (360°f) for 18 to 20 , flip them over after 10 minutes.
  5. Repeat with the remaining dough to make 10 more puris in 1 more batch.
  6. Cool the baked whole wheat puri and store in an air-tight container.

Dough of whole wheat puri

  1. To make baked whole wheat puri recipe | whole wheat masala puri | healthy baked papdis | in a bowl, take gehun ka atta.
  2. Add turmeric powder.
  3. Add chilli powder. Add more or less as per your desire.

  5. Add oil. Ghee/Olive oil can also be added as Moyan for the healthy puri recipe. The addition of fat to the dough helps in making crispy yet flaky puri.
  6. Add salt to taste.
  7. Mix it by rubbing between your fingertips till everything is incorporated well and resembles a crumble like texture.
  8. Gradually add water, we have used approx. ½ cup.
  9. Knead into a stiff dough.
  10. Cover with a lid or damp muslin cloth and keep aside for 10 to 15 minutes.

How to make baked whole wheat puri

  1. To prepare baked whole wheat puri recipe | whole wheat masala puri | healthy baked papdis | after the resting time, knead the dough one more time to smoothen out and divide the dough into 20 equal portions.
  2. Roll out a portion into a circle of about 75 mm. (3") diameter. You can even roll out a rectangular sheet and then cut into desired shapes using a cookie cutter or sharp lid.
  3. Similarly, roll out 9 more portions of the whole wheat puri.
  4. Grease a baking tray using oil. You can also line the tray with parchment paper or aluminium foil.
  5. Place 10 puris at a time on it and prick all over using a fork.
  6. Pricking ensures that the puri won’t puff up and you will get crispy puri after baking. Bake it in a pre-heated oven at 180°C (360°F) for 18 to 20 minutes. Flip them after 10 minutes. After The oven setting are different for each unit. You may take a longer time depending on the thickness of the papdis so keep an eye after as the edges tend to burn easily.
  7. Cool the baked atta puri and store in an air-tight container.

Hello Madam I tried this recipe I enjoyed it very much doing it for the first time. When I knead the dough I was not able to roll it with the roller pin and used to crack .where it went wrong please help

Tarla Dalal    Hi Simran, The flours used in this recipe are flours which are a little difficult to roll, so with practice you will be able to, add little whole wheat flour if you wish it will be easier to roll then.

a multi grain puri that can be baked...yes a low cal snack that everyone in my family enjoys with evening tea. once i did not have methi at home so i added chopped coriander and it tasted equally good, but i personally like it with methi better as it adds its unique flavour. also try ading a little green chilli-ginger paste for extra spice.
