Zamali's Spicy Oriental Stir-fry

Makes 4 to 5 servings


Ingredients


To Be Mixed Together For The Sauce
3 tbsp soy sauce
2 tbsp hoisin sauce
1 tbsp chili sauce with garlic
2 1/2 tsp cornflour

Other Ingredients
3/4 cup vegetable broth
1 cup water
1 cup rice (chawal)
1 tsp vegetable oil
1 tsp sesame (til) oil
1 cup carrot , peeled and sliced diagonally
1 cup snow pea , trimmed
1 small red capsicum , cut into small strips
1 small onion , chopped
8 ounces cooked chicken , cut into strips
1 spring onion whites , sliced

Method
  1. In a deep pan, bring the vegetable broth and water to boil. Add rice and cover and cook on a sloe flame for 20 minutes. Remove from the flame and keep aside.
  2. In medium wok or large skillet, heat vegetable and sesame oils and add carrots and stir-fry for 1-2 minutes.
  3. Add the snow peas and stir-fry for 1-2 minutes.
  4. Add capsicum and onion and stir-fry 1-2 minutes.
  5. Add chicken and stir-fry 1-2 minutes. Pour the prepared sauce mixture over the vegetables.
  6. Heat to boiling while stirring, and simmer under reduced heat until vegetables are crisp-tender (about 1-2 minutes or more).
  7. Spoon over hot rice, sprinkle with scallions and serve.
