For The Wontons
wonton wrappers
oil for deep-frying

For The Wonton Stuffing
3/4 cup boiled noodles
1 1/2 cups finely chopped cabbage
2 onions , finely chopped
1 carrot , grated
3/4 cup bean sprouts
1 tsp soy sauce
salt to taste

To Serve
green garlic sauce
chilli garlic sauce

For The Tempering (for Steamed Wontons)
2 tsp chopped garlic (lehsun)
2 tbsp chopped spring onions
1/2 tsp chopped green chillies
1 tbsp oil
salt to taste

For the wonton stuffing

  1. Heat the oil in a wok or frying pan on a high flame. Add the cabbage, onions, carrot, bean sprouts and stir fry over a high flame for 3 minutes.
  2. Add the noodles, soya sauce and salt.

For the wontons

  1. Roll out the wrapper dough into thin circles of about 65 mm. Diameter.
  2. Put a little stuffing in the centre of each dough circle and fold over to make a semi-circle. Bring the ends together and press.
  3. Repeat with the remaining dough and stuffing.

For fried wontons

  1. Deep fry the wontons in oil.
  2. Serve with green garlic and chilli garlic sauce.

For steamed wontons

  1. Arrange the wontons on a greased plate and steam for 10 minutes.
  2. Prepare the tempering by heating the oil in a wok or frying pan on a high flame and stir frying the garlic , spring onions and green chillies for a few seconds. Add salt.
  3. Pour the tempering over the steamed wontons and serve hot.
