This basic recipe unravels the mystery behind the ever so popular wontons and crispy noodles. The same dough can be used to make wontons as well as the crispy noodles.

Ingredients


1 cup plain flour (maida)
2 tsp oil
1/2 tsp salt

Method
  1. Sieve the flour and salt together.
  2. Knead into a soft dough using approx. ½ cup of warm water.
  3. Add 1½ tsp of oil and knead for a while and keep aside for 30 minutes, covered with a damp muslin cloth.
  4. Knead again using the remaining ½ tsp of oil till it becomes smooth and elastic with a wet muslin cloth.
  5. Divide the dough into 25 equal portions.
  6. Roll out each portion of the dough into a 75 mm. (3”) diameter circle. Cover with a wet muslin cloth and keep aside. Use as required within ½ hour.
