Method
For the tart cases

  1. Sieve the flour with the salt.
  2. Rub in the butter and make a dough by adding 1 tbsp of ice-cold water. Knead well.
  3. Roll out the dough to about 3 mm. Thickness.
  4. Cut with a fluted cutter of the desired size.
  5. Press into tart cases and prick with a fork.
  6. Bake blind in a hot oven at 230°c (450°f) for 10 to 12 minutes. Cool the tart cases. Keep aside.

For the filling

  1. Heat the butter and fry the onion on a slow flame for 2 minutes.
  2. Add the green chillies and flour and fry again for 1/2 minute.
  3. Add the milk. Go on stirring and cooking the mixture until it becomes thick.
  4. Add the vegetables and salt. Mix well. Remove from the flame and keep aside.

How to proceed

  1. Fill each tart case with a little stuffing mixture.
  2. Sprinkle cheese and grill for 3 to 4 minutes.
  3. Serve hot.

Variation:

  1. Creamy spinach whole wheat tartlets. To the filling, add 3 tsp of spinach puree.
