Preparation Time: 
Makes 4 servings

1 cup chopped spinach (palak)
1/2 cup chopped onions
3 tbsp chopped carrots
4 tsp cornflour
2 1/4 cups milk
1 tbsp butter
salt and to taste

For The Topping
wheat germ (2 tablespoons approx.)

  1. Heat the butter and sauté the onions for 1 minute. Add the carrots and ¾ cup of water and cool for at least 5 minutes.
  2. Add the spinach and sauté again for 1 minute.
  3. Mix the cornflour, milk and 1½ cups of water and add to the spinach mixture and simmer for a few minutes. Cool completely.
  4. Blend in a liquidiser for a few seconds. Do not strain. (straining leads to a loss of fibre).
  5. Add salt and pepper and bring to a boil. Top with wheat germ and serve hot.
