Victoria sponge cake was apparently queen victorias favorite. It was enjoyed for afternoon tea with formal dress and cake. . . And of course. This recipe has equal weights of flour, sugar and butter, which makes it richer. It can a base to wonderful dessert recipes or even bake it in a 7” diameter cake tin and serve it for high tea

Baking Time:  45 minutes.
Baking Temperature:  200ºC (400 º F)

Ingredients

170 gms self raising flour
170 gms butter
170 gms powdered sugar
3 eggs
1/3 cup milk (approx.)
1 tsp vanilla essence

Method
  1. Sieve the flour.
  2. Take out the butter from the refrigerator 1 hour in advance.
  3. Cream the butter and sugar very well.
  4. When the mixture is light and creamy, add the eggs, one at a time, beating each time thoroughly.
  5. If the mixture curdles while adding the eggs, add a little flour before adding the next egg.
  6. Finally, fold in the flour and add milk until the mixture forms a dropping consistency.
  7. Add the vanilla essence and mix well.
  8. Divide the batter into 2 equal portions.
  9. Pour 1 portion of the batter into a greased 175 mm.(7")cake tin and bake in a pre- heated oven at 200ºc (400 º f)for 20 minutes or till the cake leaves the sides of the cake.
  10. Repeat step 9 to make 1 more cake.

Handy tip:

  1. This sponge stays fresh for 4 to 5 days.
