Vegetables with Almonds

Crunchy fried almonds make all the difference. You can prepare "vegetables with walnuts" the same way using walnuts instead of almonds.

150 gms green peas
3 onions
2 carrot
3 cucumber
2 ridge gourd (turai)
1/3 cup almonds (badam)
2 tbsp cornflour
1/2 tsp sugar
4 tsp oil
oil for deep-frying
salt to taste
chillies in vinegar
chilli sauce to serve

  1. Put the almonds in hot water for 15 minutes. Remove the skins. Deep fry in oil.
  2. Slice the onions.
  3. Cut all the vegetables ( except green peas ) into cubes.
  4. Heat the oil thoroughly in a vessel and add the vegetables. Cook on a high flame for 3 to 4 minutes.
  5. Mix the cornflour in 1 1/2 teacups of cold water and add to the vegetables.
  6. Add the sugar, almonds and salt and cook for 3 minutes.
  7. Serve hot with chillies in vinegar and chilli sauce.
